I probably don’t need to tell you this, but I will: it’s hot. The long Fourth of July weekend is over, and here in the Arizona desert, we’re now facing at least a couple more months of 100+ degree temperatures. The last thing I want to do is cook. But we gotta eat… Yeah, we can go out to eat, and I’m sure we will. But that gets expensive. So I also plan to look through these 10 summer cookbooks (no-cook, barbeque/grilling, ice cream, salads, picnics, summer desserts) — some of my favorites for hot-weather-eating inspiration. No-Cook Shrimp Tacos with Tomatillo Salsa, Cherry Tomato Salad with Burrata & Pesto, Maria’s Gazpacho, Sweet Basil & Honeyed Pine Nut Ice Cream, Mojito Granita. Did someone say it was hot outside?
