My first thought when I saw this recipe was “smoothie!” However, the author notes that he was once served this dish as a salad and that it works well as a “drinkable dessert.” All I know is that with nothing more than chilled cucumbers, fresh orange juice, sugar, and oregano, this simple recipe is perfect for hot summer days — whether before a meal, between meals, or as the finishing act.
