Potato Galette with Rosemary and Two Cheeses

Potatoes gratin: creamy, cheesy, and one of the ultimate “comfort food” dishes. Of course, almost anything with potatoes and cheese would fall into that category, wouldn’t it? Yet even though this is one of my favorite dishes, I’ve yet to perfect it. I’m pretty sure that’s because I never slice my potatoes quite thin enough: as Susie Middleton notes, they should bend easily. There are two aspects of her version that I particularly like. First is that she uses a pan with a removable bottom and layers the potato slices up the sides, forming more of a tart — thus “galette.” Second is that she serves this as the main star of the meal, not as the side. And why not? We could probably all use a little more comfort in our lives.

    I’m so glad you posted the link to this recipe.  What a delightful author!  (I left a comment telling Susie that I was visiting from your website, and also that I’d move this galette to the center of my plate anytime.) :)  During the summer, I don’t run my oven often, but when I do, I “piggyback” things to make the most of it, as long as I’m heating up my kitchen.  Your post arrived just in time — I’m going to make this galette alongside some pie shells later.  Thanks!

    The potato galette smells fantastic as it’s baking!  Took photos of “prep” and will TRY to remember an “after” shot. :)  Thanks again for sharing your cookbook finds!
