Done right, there’s nothing better than Southern grits — especially cheese grits. In fact, cheese grits are how I came to love plain ‘ol grits (OK, “plain ‘ol grits” seasoned with red pepper, topped with a good dab of butter, and sprinkled with black pepper). But back to the cheese grits… I’m always trying to make them “not too unhealthy,” so no, I have never added whipping cream.

But I saw this recipe, and look: it has butternut squash puree! The good effects of the yellow veggie will counteract the richness of the cream, right? Right. And look again: do you see that there is only a #1 in the list of recipe steps? That’s my kind of recipe. One step.

Plus, it’s the holidays. That means we all need easy recipes that will give us back some needed time, and we all (well, many of us) are going to let ourselves splurge a bit. If you’re like me, here’s your answer: an easy splurge. After the holidays, mid-January, I’m going to try this recipe again, without the whipping cream, just to see… I’ll let you know the result, good or bad.

Cheesy Grits with Butternut Squash

Yield: 8 to 10 servings

Cook Time: 4 minutes

Total Time: 4 hours, 4 minutes

Ingredients:

  • 2 cups uncooked regular yellow grits
  • 1 cup whipping cream
  • 1 tsp. salt
  • 1 (32-oz.) container vegetable broth
  • 1 (15-oz.) can butternut squash puree
  • 1 (10 3/4-oz.) can Cheddar cheese soup
  • 1/4 cup butter, cut into 4 pieces
  • Finely shredded sharp Cheddar cheese

Directions:

Stir together first six ingredients in a lightly greased 4-qt. slow cooker until blended. Cover and cook on LOW four hours, stirring after two hours. Stir in butter, and sprinkle with cheese.
