Easy Spiked Lemonade

Squeezed for time but want to impress family and friends with a refreshing summertime sipper? Then take a shortcut in the kitchen and stir up a vodka-laced  drink overflowing with flavor.  The perfect way to cool down a sizzling afternoon, this icy beverage is ideal when you want to spend less time in the kitchen and more time relaxing with loved ones in the great outdoors. They’ll never know this zesty drink started with packaged drink mix — and I’ll never tell. Cheers!

Spring has arrived! Well, at least it has here in the Arizona desert. Temperatures are in the 70s and 80s, and Major League Spring Training Baseball started this week. Sitting outside in the sun with this frosty spiked lemonade seems like the perfect way to kick off spring break. If you’re on spring break too, you don’t want to waste time, so mix up this super-easy cocktail. And if you’re still stuck in the snow elsewhere, you really need to make a batch. Then turn up the heat, order Where the Boys Are or How to Stuff a Wild Bikini on Netflix, pour yourself a tall one (throw in one of those paper umbrellas), and imagine yourself on a sandy beach paradise!

Easy Spiked Lemonade

Featured Recipe From: The Harried Housewife’s Cookbook: 125 Most Requested Recipes

Yield: 8 Servings

Ingredients:

  • 1 (2-quart serving size) envelope lemon flavor unsweetened soft drink mix
  • 1 cup sugar
  • 8 cups cold water
  • 3/4 cup vodka
  • Juice of 1 medium lemon
  • 1 medium lemon, sliced
  • Ice cubes
  • Fresh mint (optional)

Directions:

In a large pitcher, combine drink mix, sugar, water, vodka, and lemon juice. Add sliced lemon; stir well. Place ice cubes in glasses; pour lemonade mixture over ice cubes. Garnish with fresh mint, if desired.

    I LOVE the Harried Housewife’s first cookbook (wonderful cookbook), so I just had to get her second one…. and I am sooooo   glad I did. This recipe sounds wonderful (and easy) so I can’t wait to make it at camp this summer :)
