Author Catherine McCord writes:

I was a bit surprised when I discovered that in Brazil and other South American countries, avocados are used primarily in sweet dishes, such as ice cream and dessert mousses. In the United States, we’re much more accustomed to avocados popping up in savory dishes like guacamole or sliced on a sandwich.

My kids are always game for making smoothies, and they love avocados. For this recipe, I let them help peel and break up the banana and pour the milk into the blender. This shake is such a cool and refreshing treat that within seconds after finishing the first glass, both my kids are clamoring for more.

This mean, green, vitamin-packed drink is the perfect sweet snack for any time of the day!

Honestly, I didn’t know where to start in this cookbook.  The Parsnip Muffins?  The Apple-Vanilla Pancakes?  The Cheesy Chicken Taquitos?  But when it came down to it, I had to try the Avocado Shake.  My kids beg for smoothies on a daily basis, and this was definitely something new for them to try.

These are delicious.  You wouldn’t even guess that there is an avocado in there.  The only thing I would tell you is to make sure that your banana is really ripe, because that is the only place that the sweetness is coming from.  But this was so easy, and so good for you, that I know it will become a regular in our house!!
