Bacon Bourbon Waffles recipe from Southern Living Bourbon & Bacon: The Ultimate Guide to the South’s Favorite Food Groups
Author Morgan Murphy:
Bacon for breakfast: not a problem. But we had to work a bit harder to put whisky on the menu. Fortunately, the elegant and luxe Kessler Canyon resort in Colorado helped us out with this winner.
Cooks&Books&Recipes {Dee}:
Bacon. Bourbon. Waffles. Bourbon, bacon drippings, and crumbled bacon are in the waffle batter, and there’s bourbon-spiked whipped cream to top the dish. Honestly, what more needs to be said? My advice? Accept that not every day can be this wonderful. But recognize that any day you start off with these Bacon Bourbon Waffles will be spectacular.

Featured Recipe From: Southern Living Bourbon & Bacon: The Ultimate Guide to the South's Favorite Food Groups
Yield: 4 servings
Total Time: 38 minutes
Ingredients:
1/2 cup heavy whipping cream
2 tsp. plus 2 Tbsp. bourbon
1 1/2 cups cake flour
1 1/2 tsp. baking powder
1/4 tsp. table salt
3 large eggs, separated
2 Tbsp. sugar
1/2 tsp. vanilla extract
1 cup milk
2 Tbsp. maple-smoked bacon drippings
1 1/2 Tbsp. butter, melted
1 cup cooked and crumbled bacon slices
Vegetable cooking spray
1/2 cup maple syrup
1/2 cup salted European-style butter, melted
Crisp cooked maple-smoked bacon slices
Directions:
1. Beat heavy whipping cream and 2 tsp. bourbon at medium speed with an electric mixer until soft peaks form. Cover and chill for later use.
2. Stir together cake flour and next 2 ingredients in a large bowl. Whisk together egg yolks and sugar 2 minutes or until pale. Add remaining 2 Tbsp. bourbon and vanilla, whisking until sugar dissolves. Whisk in milk, bacon drippings, and 11/2 Tbsp. melted butter. Stir milk mixture into flour mixture just until combined.
3. Beat egg whites at medium speed with an electric mixer until soft peaks form. Gently fold egg whites and 1 cup bacon into batter.
4. Cook batter in a preheated Belgian waffle iron coated with cooking spray until golden (about 1/2 cup batter per waffle). Drizzle each waffle with 2 Tbsp. maple syrup and 2 Tbsp. melted butter. Top each serving with 1/4 cup reserved bourbon-spiked whipped cream. Serve immediately with crisp bacon slices.
