Cooks&Books&Recipes Editor’s Notes:
Don’t look now, but summer is here! I know some of you — the purists — are saying, “No, summer doesn’t start until June 20 this year.” Whatever. For me, Memorial Day Weekend marks the start of summer. And that reminds me that I never got around to ratcheting up my diet-and-exercise regime, as I’d planned in early January… So it’s time to be sensible. Rather than those lofty New Year’s goals, some basic lower-calorie meals and higher-effort exercise days are called for. This cookbook can help with the first. In addition to the chapters you’d expect (e.g., breakfast, soups, seafood, desserts), it also includes “Meatless Entrees,” “Bubbly Casseroles,” “Slow Cooker,” “Make-Ahead Meals” (my favorite), “Miraculous Makeovers,” and “Special Occasions.” We even had friends over for dinner and served them a “low-calorie” meal from this cookbook (shhhh, don’t tell) based on Flank Steak Teriyaki & Wild Rice. And just look at these Bulls-Eye Onion Burgers! If I have onions with my burger, I want them well-cooked. Why didn’t I think of this method? Genius. And a perfect way to splurge without guilt for your Memorial Day cookout.
