Christmas Cookies, Two Ways:
Super-Festive, Super-Easy (or Both!)
I have two and only two requirements for Christmas cookie recipes: (1) super-festive; (2) super-easy. However, my favorite recipes don’t need to fulfill both requirements. What I mean is that if a recipe is super-festive, I can forget the need for it to be super-easy – and vice-versa: a super-easy recipe doesn’t have to be super-festive.
These 12 recipes fall across the spectrum. I’ve been spending some time tonight trying to decide which one I would call the “most festive,” which one the “easiest,” and which one the best combination of the two. I’ll throw out some thoughts. But since each cook has her/his own ideas about both of these categories, you’re simply going to need to look at the recipes and then decide for yourself (yes, I’m taking the noncommittal route).
I’ll start with Raspberry Poinsettia Blossoms, which is a front-runner for my choice of festive + easy. Poinsettias (in all their various colors but especially the bright-red) happen to be my favorite way to decorate during the holidays, and this easy recipe for poinsettia-inspired cookies will definitely give you a good return on your time. My vote for easiest would likely be the 5-Ingredient Pie Crust Cookies, especially if you (like me) are perfectly fine taking the easiest option possible and go with the following suggestion: “Although this recipe for pie crust is basically foolproof, you can also use store-bought pie crust instead.” The recipe then quickly changes to 1-Ingredient Pie Crust Cookies, and nothing gets simpler than that! Most festive? That’s a much more difficult choice. Among these 12 recipes are cookie ideas for 3D Christmas trees, confetti cookies, candy canes, candy cane blossoms, (peanut butter) reindeer, angel pillows, Oreo peppermint bark, white-candy-sprinkled gingersnaps, roly-poly Santas, and a Christmas tree made from Oreo Cookie balls (yes!).
