Desserts of Summer
As we’re turning the calendar page from July to August, it’s hard to believe that the official first day of summer — June 21 — was only 6 weeks ago. The first “wow” is: Wow, where did the time go? The back-to-school ads are on TV, the stores are filled with school supplies, and (gasp) the kids are actually heading back to school.
Even if (like me) you don’t have kids going back to school, and even if (like me) you live in the desert of Arizona where the temps remain over 100 degrees — or somewhere else that remains similarly non-fall-cool — I suspect that you (like me) are feeling some sadness as the hot winds of summer slowly fade away…. Here’s the good news: We have more summer ahead of us than behind us. The official first day of fall is September 23, more than 8 weeks away!
So, take a breath. Ease very slowly into those hectic fall schedules. Savor what you can of the summer that’s still ahead. These desserts — from some of the hottest (oops, coolest!) cookbooks — can help. They include two recipes for ice cream, everyone’s perennial summer favorite: Pistachio; and Brown-Buttered Candied Bacon (!). Or take a simpler route and serve up Brooklyn Egg Cream Sodas. Since you’ll be cooking outside anyway, throw some fruit on the grill for Roasted Peaches with Amaretti Filling; or Grilled Strawberries with Limoncello Sorbet. Old-Fashioned Peanut Butter Cookies will go fast at the beach (my beach vacation isn’t until next month), and the Beat-the-Heat Frozen Dessert Pizza will certainly be gobbled up before anything starts to melt. A few of these recipes will no doubt persuade you to turn on your oven, especially since they’re quick and easy; think ready-made cake/cupcake mixes that yield spectacular results for the Chocolate Turtle Cake and the “Ice Cream” Cone Cupcakes. Of course you don’t want to forget the pies, whether you choose Blueberry Crumble or S’mores (or both?). Finally, if you’re up for a challenge — one that’s guaranteed for lick-the-cups-clean results — here’s the summer show-stopper: Salted Butter Caramel-Chocolate Mousse (Mousse au Chocolat au Beurre Salé).
Yes, the new page of the calendar is way busier. All the more reason to slow down a bit, before the craziness, and enjoy the last days and desserts of summer. Because what’s the second “wow”? The same as the first: Wow, where did the time go?
