When I was growing up, I was like many other kids in that I had a very narrow range of culinary favorites: hot dogs, mac & cheese, bologna sandwiches, and grilled cheese. Even to this day, that standard fare can make me irrationally happy. I admit, though, that I generally eat hot dogs only at baseball games and that I don’t remember the last time I had a bologna sandwich (oh wait, yes I do: it was that fried-bologna sandwich at a hospital cafeteria in North Carolina a year ago). These days, gussied-up mac & cheese can be found everywhere, but gourmet grilled cheese sandwiches? Not so much.
So the kinda-grown-up kid in me rejoiced over this cookbook. I dove in to find a recipe to try. Immediately, I decided to stick to my more-traditional tendencies and choose something from the “Just Cheese” chapter, perhaps “Hog Island Grilled Cheese,” made with Gruyere, cheddar, Havarti, and fromage blanc. But I saw “Mozzarella with Crispy Prosciutto and Broccoli Rabe” and thought Hey, healthy veggies! Next I was distracted by “Gruyere and Gorgonzola with Hazelnut Butter” — just look at that photo with the dripping butter… Plus, I adore hazelnuts.
