Regular readers of Cooks&Books&Recipes know that a key criterion for my “personal favorite” recipes (and cookbooks) is “easy.” Like many other people I talk to these days, I simply don’t have time in my life for complicated. Well, Sam Zien puts the “ease” in easy. As in, he uses store-bought mashed potatoes and french fries–with no apologies! He says: “If you know me even a little, you know I’m not making my own fries. More power to those who do, but I choose to skip anything that involves deep-frying. But that doesn’t mean I don’t do something with fries.” And he proceeds to give six ideas on ways to give those fries a gourmet touch.

I love grilled corn, only hate it when it’s smothered to an extreme in mayo or an aioli…this looks not too smothered :P delicious!

The husband isn’t a fan of mayo-heavy smothers either, so I went light on it. Still delicious.
