In another post I shared photos from my stay at Garland’s Oak Creek Lodge. A highlight of my time there was a fireside chat with Mary Garland, former owner of the lodge and co-author (with Chef Amanda Stine) of Sharing the Table at Garland’s Lodge. Mary entertained us with stories about her years at the lodge and about her decision to self-publish a collection of favorite recipes served in the dining room. She also noted her surprise when, in 2007, the International Association of Culinary Professionals named the cookbook one of three finalists for best cookbook in its American Cooking Award category.
But when you see this cookbook, you won’t be surprised. Amanda divides her recipes into five chapters: Breakfast; Teatime; Bread, Soup, & Salad; Main Dishes & Sides; Desserts. First, though, she offers a two-page spread on “Cooking at Garland’s: Tips & Notes on Tools & Techniques.” This short section alone is worth picking up the book! She lists all the ingredients (e.g., Kosher salt) and tools (e.g., microplane graters) that she uses — and why. Sprinkled throughout the cookbook are such helpful sidenotes as “Salads at the Lodge” (tips for making dressings and choosing greens), “The Joy of Soup,” “Favored Fish and Marinades,” and perhaps my favorite: “A Sampling of Seasonal Menus.”
And then there is the other component of this book: Mary’s delightful stories about life at the lodge, family and staff (which seem to be one and the same) at the lodge, and famous guests and happenings at the lodge where she lived and worked for 30+ years. She begins the book with the history of what started, in the early 20th century, as Todd’s Lodge, and she continues with vignettes throughout: “Seasons,” “Oak Creek,” “Orchards in the Red Rocks,” “Adventures in Animal Husbandry.”
Mary’s writing draws you in, and you’re welcomed just as are her guests at Garland’s Oak Creek Lodge. It’s a fascinating tale of a uniquely cooperative, collaborative, and charming way of life. Pull up a chair, turn off the cellphone and TV, and read on.

About the Authors:
Amanda Stine was chef at Garland’s Lodge for 30+ years. She landed in Arizona from the mountains and restaurants of Jackson Hole, Wyoming, via California and Texas. Her menus reflect the bounty of each season and celebrate the organic fruits and vegetables grown in the orchards and gardens of the Lodge.
Mary Garland moved to Arizona from California in the early 1970s. The Lodge, all its characters, and her family have been a source of lifelong learning.
