I made this recipe for a recent celebratory lunch, and it was a huge hit. The salsa verde was particularly delicious and I would definitely make it again and maybe even pair it with other dishes such as salmon or chicken. Despite my best efforts, my salsa verde was not quite as finely minced as the one in the picture above. Next time I might try whirling it in my small food processor for a few seconds, but it tasted wonderful even not chopped super fine. The combination of cool, crisp salad with warm, meaty steak was perfect for a summer’s afternoon. I liked how Tramonto gave a new, more complex take on steak and would be interested to see what other sides and sauces he recommends. As a final note, we ended up dipping some hot, crusty french bread in the extra salsa verde and it was fantastic!
