If you, like me, want to rediscover your bread machine, or if you’re just now thinking of trying bread-baking with the new generation of bread machines, this cookbook is one to consider. It has three chapters of recipes for Walk-Away Bread: “Some people want to put the ingredients in the bread machine, walk away and come back later to a freshly baked loaf” — and it has many more chapters with recipes that “require a bit more participation from the baker.” Being usually short on time, I tend to fall into the first category, but there are times when I truly need to knead or simply must see bread rising in the oven. Although the recipe below is in the first, no-effort-required group (even when baked in the oven), you wouldn’t know it from the result. A nice, dense texture studded with chunks of aged cheddar cheese? Oh yeah. And in the fully walk-away version made completely in the bread machine, the shredded cheese more subtly laces through each bite. Don’t make me choose…
