The cuisines found there (both native and inspired by settlers) include Mexican, Tex-Mex, Southern, Nuevo Southern, Cajun, Creole, Coastal, Soul, New Florida, Native American, and Cuban. “Third Coast Cuisine” not only features recipes from the region but also explores the history of the cultures that begot them. The author, Stuart Reb Donald, is a chef, food activist, and award-winning food writer. Donald performs live cooking demonstrations and also penned the cookbook “Amigeauxs: Mexican/Creole Fusion Cuisine.” He hosts two Internet cooking shows: “Everyday Gourmet” and “Little Grill Big Flavor.”
