I’m not vegan. Though I admire those of you who are, truth be told: I’m fairly certain I’ll never be vegan. But that doesn’t mean I can’t enjoy some vegan dishes. After one look at the photo for this dish — and then the recipe — I knew I had to make it. Warm new potatoes, colorful bell peppers, cheery-red cherry tomatoes, Persian (new to me) cucumbers, smooth avocados … all marinated together in a tropical-sounding, tangy lime-cumin dressing? I’m ready to convert, at least long enough to enjoy this ceviche and slip away to a virtual vegan beach vacation.
