Potatoes gratin: creamy, cheesy, and one of the ultimate “comfort food” dishes. Of course, almost anything with potatoes and cheese would fall into that category, wouldn’t it? Yet even though this is one of my favorite dishes, I’ve yet to perfect it. I’m pretty sure that’s because I never slice my potatoes quite thin enough: as Susie Middleton notes, they should bend easily. There are two aspects of her version that I particularly like. First is that she uses a pan with a removable bottom and layers the potato slices up the sides, forming more of a tart — thus the galette in Potato Galette with Rosemary and Two Cheeses. Second is that she serves this as the main star of the meal, not as the side. And why not? We could probably all use a little more comfort in our lives.
