Having previously lived in Texas for nine years, I can attest to just how seriously folks there are about their chili. It’s where I learned all about chili. My husband and I have even entered a chili cook-off or two with our secret recipe. So yes, I too religiously follow the cardinal Texas chili rules: no tomatoes, no beans. Well … except … every once in a while … I confess that I cheat and add beans. Just to make the chili a little healthier. A little lighter. I am sorry. To atone for my sins, I’m making Lisa Fain’s version (both beer and coffee in chili? oh yeah) for football-watching next weekend. Go Cowboys!
