Beef and Mushroom Soup

The details on this cookbook, and the recipe for Slow Cooker Short Ribs, can be found here. The (ingenious) idea behind the cookbook is that each menu combination offers one main dish and an additional “Round 2” recipe — a recipe developed using the same base ingredient as the main recipe. Below is the Round 2 recipe from the menu “A Hearty Helping”: Slow Cooker Short Ribs, Mushroom Walnut Tarts, and Ginger Spice Cake with Ginger Glaze.

As I mentioned in the previous post, we cook Slow Cooker Short Ribs often. But we never have enough left-overs for a full meal (not even lunch). What to do with the meat from one or two ribs? Soup, of course. Why didn’t I ever think of that??? If, say, you didn’t make the Mushroom Walnut Tarts and so didn’t have those leftovers (just a possibility), you could always add some sliced mushrooms and baby carrots and maybe substitute Guinness beer for some of the water in the recipe. That version might look like this:

Either way, this soup is delicious. The husband raved and raved — for something that required basically no money or time at all. That’s a “round 2” knock-out win.

  • Leftover drippings from Slow Cooker Short Ribs
  • 1/3 cup leftover mushroom and onions from Mushroom Walnut Tarts
  • 1 1/2 cups leftover broth from Mushroom Walnut Tarts
  • Leftover rib from Slow Cooker Short Ribs, meat coarsely chopped


  1. In a medium pot over medium heat add drippings from short ribs. Add leftover mushrooms and onions. Bring to a simmer. Stir in beef broth and two cups water. Bring to a simmer, then stir in leftover meat.
